Red Velvet Brownies with White Chocolate Frosting

1 stick butter
1 1/2 cups sugar
2 eggs
2 teaspoon vanilla
1 1/4 cups flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2 tablespoons red food coloring

Preheat oven to 350. Line 8 x 8 pan with nonstick foil. In a small bowl, mix cocoa powder, food coloring and vanilla to form a paste. Set aside.

In a mixer, cream butter and sugar till fluffy. Add eggs. On low, mix in the cocoa powder paste, flour and salt. Mix only until combined. Spread evenly in the pan and bake 25-30 minutes, or until toothpick inserted in center comes out clean. Cool completely. At this point you have chewy brownies. Serve as is or with powdered sugar if you want. Or...proceed to white chocolate frosting!

White Chocolate Frosting:

1 stick butter, at room temperature
2 1/2 cups powdered sugar (I sifted this through a fine colander to reduce lumps)
1 tsp. vanilla
4 ounces white chocolate, melted (melt slowly & carefully in microwave)
1/2 tablespoon milk (I added a little more to thin it out-eyeball it)

Cream butter in mixer till fluffy. Add vanilla. On low, mix in powdered sugar, then white chocolate. Add milk to reach desired consistency. Whip on medium a few seconds till fluffy! Spread on cooled brownies. Chill and then cut!

Cheese and Bacon Rolls

2 cans of pizza dough
Bacon (use pepperoni, ham, etc)
Cheese (use mozzarella, swiss, cheddar, provolone, etc)

Roll out one of the pizza dough to a rectangular shape. Spread cheese and bacon on top of the dough. Now roll out the other round of pizza dough and lay it on top of the other to sandwich the bacon and cheese.
Now roll up both rounds into one long tube. Slice an inch from the end of the tube for your bacon and cheese swirl. Continue slicing until your tube’s finished.
Add some extra cheese on top of your swirls. Bake at 350 degrees for about 20 minutes or until golden brown.

According to experts, a swarm of GIANT MOSQUITOES is set to invade central Florida by this summer. They're about 20 TIMES LARGER than the regular blood sucking beasts and their bites are PAINFUL! Let's hope they don't want to take a vacation to North Carolina, UNLESS they come only to sting DUKE fans!! DOH! LOL

Watch the video below about em'

Chicken wrapped in bacon & basil, then stuffed with garlic butter and Camembert cheese.  All you have to do is pan fry it on a high heat pan for around 15-20 minutes each side (or until cooked through depending on the size). What you are left with is the most mouth-watering of dishes… rich, bacony-cheesy flavour. You’ll feel like you’ve brought a restaurant to your home. No preservatives and poor quality ingredients. Win-Win!

Good idea?

A contributor to Reddit posted a receipt from a restaurant that included a $4 discount for "well-behaved kids." Sweet gesture that I'm sure the parents appreciated, right? But does this send a dangerous message?

The Stir doesn't like it and here's why:

-- Eating out with children is already filled with plenty of pressure for parents
-- Every raised voice, every dropped spoon can make a mom feel like all eyes in the joint are searing into her
--There needs to be a certain amount of tolerance for families

Plus, what about the parents that feel their little angels were perfect and still didn't receive the discount? Does the restaurant really want to quarrel with an angry Mom?

So some of you might be betting on the Big Game outcome Sunday...how about putting down a wager on one of your friends to scarf down a large pizza in under a minute on gameday! Those of you who know me, Bobby Lane, have seen my DJ FB posts about my eating adventures around Greenville but watching Japanese competitive eater Kobayashi here taking out a large pizza in under 60 seconds might be a challenge I can't live up to

It turns out all along I was struggling unnecessarily to get ALL the delectable meat off my chicken wings...BEHOLD! Happy future eating, especially this Big Game Sunday!

My son Matthew will be 10 this year (one of my favorite pictures of him on the left at Lake Lure NC), and that's ME on the right at Lake Michigan when I was little...see any resemblance?

My son Matt again pictured left at Grandfather Mtn and ME on the right way back when....

Look Good  ?

To make this, you'll need:
2 crescent roll tubes
1 LB ground beef (or ground turkey)
1 packet of taco seasoning
1 1/2 cups grated cheddar cheese

Lay out the two tubes of crescent pastry, thick sides in. Use some of the left over crescent rolls to to make the center a bit thicker.
Brown beef and add taco seasoning.
Lay beef in a circle inside of the laid out crescent rolls
Add cheese to the top
Pull over crescent rolls and tuck in under meat and cheese.
Add cheese, lettuce, tomato, black olives, sour cream or whatever you desire for your tacos, in the middle.

Follow cook time on the pack of crescent rolls, and once it's done, you're good to go.
